Vegan Rainbow Peanut Noodles


Ingredients:


  • 1-2 handfuls sliced red cabbage

  • 2-3 whole carrots

  • 1-2 handfuls of spinach

  • 1 red bell pepper

  • 1 bag edamame (~1 cup)

  • 1/2 bag of whole wheat spagetti noodles (~4 servings)

  • cilantro


For "Peanut" Sauce:

  • 1/2 cup almond butter (you can substitute peanut butter if you'd like)

  • 4 tbsp soy sauce

  • 3 tbsp rice vinegar

  • 1 tbsp maple syrup

  • 1 tbsp toasted sesame oil

  • 2 tsp sriracha

  • 1 tsp garlic

  • 1 tsp ginger (optional)


Steps:

  1. Fill a large pot with water and boil your noodles as suggested on the package.

  2. Cut the cabbage, carrots, and red bell pepper into long thin slices. I usually grab a bag of pre-cut cabbage to speed this up.

  3. Mince cilantro and add the veggies to a large mixing bowl.

  4. Make the sauce by adding all of the contents to a bowl and mixing well. I like to add them to an air tight container and shake.

  5. When the noodles are done, strain, and add them with the veggies to the large bowl.

  6. Pour over sauce (making sure all contents are mixed evenly) and serve.


Makes about 4 servings and keeps well in the fridge.
